Ingredients
- 2 c. sifted all-purpose flour
- 2 tsp. baking soda
- 2 tsp. baking powder
- 1 tsp. salt
- 2 tsp. cinnamon
- 2 c. sugar
- 1 c. salad oil
- 4 eggs
- 2 c. shredded carrots
- 1 c. chopped nuts
- 1 c. chopped dates
- 1 c. raisins
Directions

1Sift flour with baking soda, powder, salt and cinnamon; set aside.

2Mix sugar with oil, beating well.

3Alternately add eggs with flour mixture to sugar.

4Fold in carrots, dates, nuts and raisins.

5Pour into a greased and floured 9-inch tube pan.

6Bake at 350° for 1 hour or until top springs back.

7Let cool on rack 10 minutes.

8Loosen around sides and center.

9Remove from pan; cool. When cool, you can frost with cream cheese frosting or leave plain.
