Christmas Fruit Cake

Ingredients

  • 1 c. margarine or shortening
  • 1 c. sugar
  • 1 c. milk
  • 1 c. molasses
  • 4 eggs, beaten
  • 4 c. flour
  • 1 tsp. mace
  • 1 tsp. nutmeg
  • 1 tsp. soda
  • 1 Tbsp. cinnamon, ground
  • 1 Tbsp. allspice, ground
  • 1 Tbsp. cloves, ground
  • 1 lb. currants
  • 1 lb. raisins
  • 1 lb. dates, chopped
  • 2 lb. candied fruit
  • 1 c. walnuts, chopped

Directions

    Cream shortening and sugar; add eggs, milk and molasses and blend well.

    Sift 3 cups of flour and spices together.

    In large pan, place all the currants, raisins, chopped dates, candied fruit and chopped walnuts and add 1 cup of flour.

    Coat all the fruit well.

    Now add flour and spice mixture to egg mixture and blend. Then add coated fruits and nuts slowly.

    May be necessary to complete this by hand.

    Decorate with whole 6 red/green cherries and nuts.

    Bake 2 to 4 hours in tube pans or small loaf pans at 250°.

    Place large pan of water on bottom shelf of oven to increase volume of fruit cakes.
