Christmas Nut Cake

Ingredients

  • 1 lb. butter (not margarine)
  • 2 c. sugar
  • 6 eggs, separated
  • 3 c. flour
  • 3/4 lb. candied cherries (red and green, cut in half)
  • 1/4 lb. candied pineapple, cut up
  • 5 c. broken pecan pieces
  • 2 oz. lemon extract

Directions

    Cream butter and sugar.

    Add beaten egg yolks, flour, chopped fruits, broken nuts and lemon extract.

    Beat egg whites until stiff but not dry.

    Fold into batter.

    Bake 1 hour at 300°.

    Can be baked in 3 small loaf pans or 1 large tube pan.

    Add small pan of water in oven while baking to keep from drying.

    Refrigerate for better cutting.

    Pans can be lined with foil.
