- 1 qt. pecans
- 1 1/2 oz. lemon extract
- 4 c. all-purpose flour
- 3 c. sugar
- 1 tsp. baking powder
- 6 eggs
- 1 lb. butter
- 1/2 lb. cordial cherries (red and green)
- 1/2 lb. cordial pineapple
- 1 lb. white raisins
Directions

1Soak pecans overnight in lemon extract.

2Preheat oven to 300°. Grease and flour tube cake pan.

3Cream butter and sugar.

4Add eggs and mix well.

5Add dry ingredients, mixing well.

6Add fruit and nuts and stir.

7Spoon into pan, slightly flattening top.

8Bake 2 1/2 hours at 300°.

9Delicious, much better than fruit cake.
