  • 2 c. sugar
  • 1 tsp. vanilla
  • 1 c. chopped nuts
  • 2 c. grated zucchini
  • 3 c. flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. salt

Directions

    Beat together the first 4 ingredients.

    Add nuts and zucchini. Combine the rest; stir gently into the zucchini mixture.

    Bake in 2 loaf pans that are pregreased and floured at 350° for 1 hour.
