- 3 Tbsp. butter or margarine
- 1/4 c. all-purpose flour
- 4 c. milk
- 2 c. peeled, chopped baking potatoes
- 1/2 c. minced onion
- 3/4 tsp. salt
- 1/2 tsp. ground pepper
Directions

1Melt butter in heavy saucepan over low heat; add flour, stirring until smooth.

2Cook, stirring constantly, 1 minute. Gradually stir in milk.

3Stir in potatoes and next 3 ingredients. Cook over medium heat, stirring frequently, until mixture is thickened and potatoes are done.

4Yields 5 cups.
