- 3 tbsp. all-purpose flour
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 lb. beef stew meat, cubed
- 2 tbsp. oil
- 1 cup apple cider
- 1/2 cup water
- 1 tbsp. vinegar
- 1/2 tsp. thyme
- 2 lg. carrots, cut into pieces
- 1 celery rib, cut in pieces
- 1 lg. potato, peeled and cubed
- 1 md. onion, sliced
Directions

1In a bowl or bag, combine flour, salt, and pepper; add beef and toss to coat.

2In a large saucepan, brown beef in oil.

3Add cider, water, vinegar and thyme; bring a boil.

4Reduce heat; cover and simmer for 1 hour and 45 minutes or until the meat is tender.

5Add carrots, celery, potato and onion; return to a boil.

6Reduce heat; cover and simmer for 45 minutes or until vegetables are tender.
