- 1 cup apple cider or juice
- 2 tablespoons apple cider vinegar
- 1 tablespoon finely chopped shallots
- 1 teaspoon Dijon mustard
- 1/2 cup pure olive oil or a mild vegetable oil
- 1 teaspoon hazelnut oil, optional
- Salt and pepper
Directions

1Place the cider and vinegar in a small saucepan and bring to a boil.

2Lower the heat and simmer until reduced to 3 tablespoons of liquid.

3Pour it into a small bowl and add the shallots and mustard.

4Whisk to combine, then slowly whisk in the olive oil and the hazelnut oil, if using.

5Season to taste with salt and pepper.
