Cider Vinegar Dressing

- 1 c. cider vinegar
- 3 eggs
- 1/4 c. all-purpose flour
- 1 Tbsp. dry mustard
- 1 tsp. salt (optional)
- 1/4 tsp. freshly ground black pepper
- 2 Tbsp. margarine
- artificial sweetener equal to 1/2 c. sugar (optional)
Directions

1In a heavy saucepan, whisk together the vinegar, eggs, flour, mustard, salt, pepper and 2 cups water.

2Cook over medium heat, stirring constantly, until smooth and thickened, about 6 minutes. Remove from heat.

3Stir in margarine and artificial sweetener. Pour into clean jars.

4Cover; refrigerate up to 3 months.
