Cilantro Corn Pancakes

Ingredients

  • 1/2 c. flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. sugar
  • 1/4 tsp. salt
  • 1/3 c. cornmeal
  • 1 egg or 2 egg whites
  • 1 c. buttermilk or plain yogurt
  • 2 Tbsp. vegetable oil
  • 1 c. cooked and drained corn kernels
  • 1/4 c. chopped mild chiles
  • 1/4 c. chopped fresh cilantro
  • 1/3 c. chopped scallions or mild onions
  • additional oil

Directions

    In a large bowl, sift together the flour, baking soda, baking powder, sugar and salt.

    Stir in cornmeal.

    In another bowl, lightly beat eggs.

    Add buttermilk, oil, corn, chiles, cilantro and scallions.

    Add to dry ingredients and stir until combined. Place a griddle or skillet over medium high heat.

    When hot, brush with oil, then drop batter by large tablespoonfuls onto griddle. Cook until tiny holes form on each pancake.

    Turn pancakes and brown on other side.
