- 1 head garlic chopped
- 1/2 green pepper or hot red, seeded and minced
- 1 bunch fresh cilantro finely chopped
- 1 cumin seeds teapoon, toasted and ground
- 1/2 cup olive oil
- vinegar to taste
- salt to taste
Directions

1In a skillet over medium-high heat, lightly toast the cumin until fragrant.

2Place seeds in a mortar and mix until ground.

3Add the chopped garlic, finely chopped coriander, seeded and chopped pepper and a little salt, blending these ingredients thoroughly.

4Pour in half a cup of oil, vinegar to taste, a little cold water and mix well.
