- large cucumbers, peeled and sliced 1/4-inch thick
- 1 c. pickling lime
- 1 small bottle red food coloring
- 1 Tbsp. powdered alum
- 1 c. vinegar
- 5 c. sugar
- 1 c. water
- 4 sticks cinnamon
- 3/4 c. red hots
Directions

1Use large cucumbers.

2Peel, slice and core out centers for 1 gallon rings.

3Place in large pan or gallon glass jar.

4Mix pickling lime with enough water to cover.

5Let stand 24 hours. Drain.

6Wash in clean water.

7Soak in cold water for 3 hours.

8Mix red food coloring, powdered alum and enough water to cover cucumbers in large kettle.

9Simmer 2 hours.

10Drain.

11Bring to a boil the vinegar, sugar, 1 cup water, cinnamon sticks and red hots. Pour over cucumbers.

12Reheat syrup for 3 days and pour over cucumbers.

13After 3 days, pack cucumbers into hot jar and pour hot syrup over them.

14Seal.
