- 2 gal. or 8 qt. cucumbers
- 2 c. lime
- 3 c. vinegar
- 1 tsp. alum
- 1 small bottle red food coloring
- 1 c. red hot candy or 2/3 bottle cinnamon extract
- 2 c. water
- 10 c. sugar
- 8 cinnamon sticks
Directions

1Peel and core cucumbers; cut in strips.

2Add 2 cups lime and cover with water.

3Soak for 24 hours.

4Drain and wash well.

5Cover with cold water and ice for 3 hours and drain.

6Mix 1 cup vinegar and alum, 1 small bottle of red food coloring and enough water to cover cucumbers.

7Simmer for 2 hours.

8Drain and throw juice out. Mix 2 cups vinegar, 2 cups water, sugar, cinnamon sticks and cinnamon extract (or red hots dissolved in warm water 1 hour).
