  • 7 or 8 lb. large cucumbers
  • 1 c. lime
  • food coloring (red/green)
  • 1 Tbsp. alum
  • 3 c. vinegar
  • 12 to 15 c. sugar
  • 12 sticks cinnamon
  • 1 1/2 or 2 pkg. cinnamon red hots
  • 3 c. water

    Use large cucumbers.

    Peel off green rind.

    Take out seed and cut in 1/4-inch slices or 1-inch cubes.

    Soak in 1 cup lime water for 24 hours.
