  • 6 tbsp (3/4 stick) butter, at room temperature
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 None egg
  • 1 1/2 cups self-rising flour, sifted
  • 1/2 cup milk
  • 1/4 cup cold tea
  • 1/2 cup raisins

  • 1 tbsp butter, melted
  • 1 tbsp sugar
  • 1/2 tsp ground cinnamon

    Preheat the oven to 350°F. Lightly grease and line a deep 8-inch round cake pan with parchment paper.

    Bear butter, sugar and vanilla in a large bowl with an electric mixer until pale and creamy. Beat in egg. Lightly fold in flour. Stir in milk and tea. Fold in raisins. Spread in prepared pan, smoothing the surface.

    Bake 30-35 mins, until toothpick inserted into center comes out clean. Cool in pan 10 mins. Remove from pan; cool on wire rack.

    For the topping, while cake is warm, brush cake with melted butter. Sprinkle with combined sugar and cinnamon. Serve warm.
