Cinnamon Ring Cucumbers

  • large overripe cucumbers (enough to make 2 gallons after cored and sliced round-wise about 1/4-inch thick)
  • 2 c. lime
  • water
  • 1 c. white vinegar
  • 1 small bottle red food color
  • 1 Tbsp. alum
  • 10 c. sugar
  • 2 (10 oz.) pkg. red hots (candy)
  • 8 sticks cinnamon
  • 2 c. white vinegar
  • 2 c. water

Directions

    Soak cucumbers for 24 hours in lime and enough water to cover. Drain and soak for 3 hours in clean clear water.

    Drain.

    Simmer for 2 hours in 1 cup white vinegar, red food coloring and enough water to cover.

    Drain.
