Cinnamon Rolls

  • 2 pkg. dry yeast
  • 1/2 c. warm water
  • 1 tsp. sugar
  • 1 c. sugar
  • 1 stick margarine
  • 1/2 tsp. salt
  • 1 c. boiling water
  • 1 c. cold water
  • 2 eggs, beaten
  • about 8 c. flour

Directions

    Mix the yeast, warm water and 1 teaspoon sugar in a small glass bowl; set aside (do not use plastic!).

    Mix 1 cup sugar, margarine, salt and boiling water together until margarine melts. Add the cold water and beaten eggs to the sugar-water mixture. When cool, add yeast mixture.

    Adding about 1 1/2 cups at a time, sift about 8 cups of flour into yeast mixture.

    Dough will be slightly sticky.

    Oil dough and let rise double.

    Punch down; let rise a second time.

    Punch down and roll out onto floured board.
