Cinnamon Squash Rings

  • 2 Tbsp. brown sugar
  • 2 Tbsp. milk
  • 1 egg
  • 3/4 c. soft bread crumbs
  • 1/4 c. yellow or white cornmeal
  • 2 Tbsp. ground cinnamon
  • 1 large acorn squash, cut crosswise into 1/2 inch slices and seeded
  • 1/3 c. margarine, melted

Directions

    Heat oven to 400°.

    Mix brown sugar, milk and egg.

    Mix bread crumbs, cornmeal and cinnamon.

    Dip squash into egg mixture and coat with bread crumbs.

    Place in ungreased baking pan.

    Drizzle with margarine.

    Bake 30 to 35 minutes until soft.
