Ingredients

  • 2 sticks butter
  • 1/2 C. powdered sugar + extra for garnish
  • 2 C. flour
  • 2 T. lemon zest, grated
  • pinch of salt
  • Lemon Filling:
  • 4 eggs
  • 2 C. sugar
  • 4 T. flour
  • 6 T. lemon juice
  • 2 T. lemon zest, grated

    Preheat oven 350 degrees.

    Crust:

    Combine all ingred. in a large mixing bowl and stir until well blended.

    Pressinto bottom of a 9 x 12 pan. Bake for 20 min.or until just barely golden.Remove from oven and cool. For filling: beat together eggs and lemon juice. When blended add dry ingred. and zest. Beat until blended. Pour lemon filling into cooled crust. Bae 20-25 min. or until top is dry and lightly browned. Garnish with powdered sugar. Makes 6 servings
