Citrus Sardines

Ingredients

  • 2 sardines large or 4 small, 325g, scaled and gutted, ask your fishmonger to do this
  • 1 orange or lemon, sliced
  • 2 bay leaves -3
  • 1 3/8 tablespoons Flora Original pro.activ Olive
  • 1 clove garlic, finely chopped
  • lemon Zest half
  • 1 tablespoon fresh parsley chopped
  • cracked black pepper to finish

Directions

    Stuff the sardines with some of the orange slices (reserving remainder for garnish) and the bay leaves. Make a couple of slashes through the skin.

    Cook the sardines under a preheated grill for 3-5 minutes each side, depending on size.

    As a topping, mix together the Flora pro.activ, garlic, lemon zest and parsley, and spoon over the hot sardines.

    Serve with crusty bread, mixed green salad and garnish with remaining orange slices, black pepper and parsley.
