  • 2 cans minced clams
  • 3/4 c. sherry
  • 3/4 Tbsp. black pepper
  • 1 1/2 tsp. salt
  • 3/4 Tbsp. thyme
  • 6 bay leaves
  • 1 tsp. Tabasco
  • 2 qt. half and half
  • 1 c. potatoes, diced
  • 1 c. celery, chopped fine
  • 1 c. onion, chopped fine
  • 1 c. green pepper, chopped fine
  • 1 c. leeks, chopped fine
  • 3/4 c. butter
  • 1 c. flour

Directions

    Bake at 350° for 30 minutes the butter and flour.

    Cook together until potatoes are tender the clams, sherry, black pepper, salt, thyme, bay leaves, Tabasco, potatoes, celery, onion, green pepper and leeks.

    Add baked roux (flour and butter) to cooked vegetables; stir well.

    Add the half and half; simmer until hot, stirring occasionally.
