  • 1 slice cooked bacon, finely chopped
  • 1 Tbsp. flour
  • 1/3 c. onion, chopped
  • 2 large cans minced clams (do not drain)
  • 1 c. potatoes, diced
  • 1 c. light cream
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbsp. butter or margarine
  • 1/4 tsp. parsley (fresh or dried)
  • a pinch of sugar

Directions

    Fry first four ingredients in butter or margarine. Add remaining ingredients; simmer until the potatoes are soft, but firm. Add light cream and a pinch of sugar to the pot. Serve with a baguette and a nice white wine. BON APPETITE!
