Ingredients

  • 2 cans minced clams (use liquid)
  • 1 large chopped onion
  • 2 finely chopped celery stalks
  • salt and pepper
  • 1/2 tsp. thyme
  • 1 bay leaf
  • 1/4 lb. salt pork (try out) or 1/4 lb. bacon
  • 3 small potatoes, cubed

Directions

    Boil potatoes separately; use potato water (2 cups).

    Saute onion and celery in salt pork drippings before adding to rest of ingredients.

    May add 1 can tomato soup.

    Simmer and serve. Garnish with chopped parsley.
