- 1 large chopped onion
- 2 finely chopped celery stalks
- salt and pepper
- 1/2 tsp. thyme
- 1 bay leaf
- 1/4 lb. salt pork (try out) or 1/4 lb. bacon
- 3 small potatoes, cubed
Directions

1Boil potatoes separately; use potato water (2 cups).

2Saute onion and celery in salt pork drippings before adding to rest of ingredients.

3May add 1 can tomato soup.

4Simmer and serve. Garnish with chopped parsley.
