Ingredients

  • 1 large onion
  • 1 stalk leek
  • 2 lb. raw potatoes
  • 1 green pepper
  • 3 stalks celery
  • 1/4 lb. lean salt pork
  • 1/2 lb. butter
  • 1 c. flour
  • 3 or 4 (6 1/2 oz.) cans minced clams
  • 1 qt. half and half
  • dash of basil
  • 1 tsp. Accent
  • 2 (10 1/2 oz.) cans chicken broth
  • 2 cans water

Directions

    Brown meat slightly.

    Add vegetables and simmer together in butter.

    Blend in flour (sprinkle over).

    Add clam juice and chicken broth to make 2 quarts.

    Simmer 1/2 hour.

    Add half and half, clams and salt and pepper to taste.

    Makes 3 1/2 to 4 quarts.
