  • 2 (6 1/2 oz.) cans minced clams
  • 1 c. finely chopped onions
  • 1 c. finely diced celery
  • 2 c. very finely diced potatoes
  • 3/4 c. butter
  • 3/4 c. flour
  • 1 qt. dairy half and half
  • 1 1/2 tsp. salt
  • few grains white pepper
  • 2 Tbsp. red wine vinegar

Directions

    Drain juice from clams and add to vegetables.

    Add enough water to barely cover vegetables.

    Simmer, covered, over medium heat until tender.
