Ingredients

  • 6 strips bacon, diced
  • 1/2 onion, diced
  • 2 to 3 green onion stalks
  • 4 to 5 diced Russet potatoes
  • 2 to 3 stalks celery, diced
  • 1 carrot, thinly sliced
  • 2 Tbsp. chopped bell pepper
  • 1 small jar pimientos
  • 3 c. water
  • 1 tsp. salt
  • 1 tsp. pepper
  • 2 tsp. Worcestershire sauce
  • 4 to 6 drops Tabasco sauce
  • 1 pt. (2 c. ) half and half
  • 3 cans chopped or minced clams (with juice)
  • chopped parsley
  • 1 bay leaf
  • 1/4 tsp. thyme

Directions

    In a large kettle, cook bacon until crisp.

    Add onion, potatoes, celery, carrots, green pepper and garlic.

    Pour in water and add salt, pepper, Worcestershire sauce and Tabasco sauce. Bring to a boil.

    Reduce heat, cover and simmer 15 minutes or until potatoes are tender.
