- 34 lb chopped clam
- 1 medium onion, chopped
- 34 cup chopped celery
- 3 -4 slices thick bacon, chopped
- 14 cup butter
- 1 tablespoon oil
- 1 teaspoon salt
- 14 teaspoon ground pepper
- 14 teaspoon dried thyme
- 14 teaspoon paprika
- 1 bay leaf
- 14 cup flour
- 2 potatoes, diced
- 12 cup water
- 12 cup white wine
- 1 (8 ounce) bottle clam juice
- 12 cup whipping cream
- 1 cup milk (approx.)
Directions

1In skillet, over med heat, cook onion, celery, and bacon in butter and oil.

2Add salt, pepper, thyme, paprika, and bay leaf.

3Cook until vegetables are crisp tender.

4Stir in flour until mixed.

5Cook 5 minute (don't burn).

6In sauce pan,cook potatos in water, wine, clam juice and liquid for 15 minute Add clams, onion mix, and cream.

7Cook until thickened.

8Add milk to desired consistancy.
