Ingredients

  • 2 to 3 lb. potatoes, peeled and cubed
  • 1 onion, finely chopped
  • 1/4 c. butter or margarine
  • 1 tsp. salt
  • 1 tsp. parsley
  • 2 c. finely chopped carrots
  • 2 c. chicken broth
  • 1/2 c. water
  • 2 cans minced clams
  • 1 c. milk
  • 1/4 c. white wine

Directions

    Saute onion and carrots in butter.

    Add to a soup pot the onion, carrots, potatoes, salt, chicken broth and water.

    Cook until potatoes are tender.

    Add parsley, juice from clams, milk and wine.

    Simmer 5 minutes.

    Add clams.

    Simmer 5 more minutes and serve.
