- 2 to 3 lb. potatoes, peeled and cubed
- 1 onion, finely chopped
- 1/4 c. butter or margarine
- 1 tsp. salt
- 1 tsp. parsley
- 2 c. finely chopped carrots
- 2 c. chicken broth
- 1/2 c. water
- 2 cans minced clams
- 1 c. milk
- 1/4 c. white wine
Directions

1Saute onion and carrots in butter.

2Add to a soup pot the onion, carrots, potatoes, salt, chicken broth and water.

3Cook until potatoes are tender.

4Add parsley, juice from clams, milk and wine.

5Simmer 5 minutes.

6Add clams.
-
7Simmer 5 more minutes and serve.
