Clam Chowder(Approximately One Gallon)

Ingredients

  • 8 thin slices salt pork
  • 1/4 lb. (1 stick) butter
  • 3 c. diced onions
  • 6 c. cubed potatoes
  • 1/2 c. flour
  • 4 c. clam juice
  • 3 c. chopped clams
  • 1 pt. light cream

Directions

    Saute salt pork in large pot until rendered.

    Add butter and heat over low heat until bubbly.

    Add onions and cook 5 minutes. Add potatoes and cook 5 minutes, add water to cover.

    Add flour, stirring an additional 3 minutes.

    Add clam juice and cook until potatoes are tender.

    Add chopped clams until well heated, then add cream.

    Do not boil.

    (You can use bacon instead of salt pork if desired.)
