Ingredients

  • 20 oz. minced clams, drained (but save juice in case mixture is dry)
  • 1 stick butter
  • 1 small onion, minced
  • 1 clove garlic, minced
  • 1 tsp. oregano
  • 1 tsp. parsley
  • 1 tsp. black pepper
  • 1/4 tsp. red pepper
  • 1/2 c. bread crumbs
  • 1 lemon
  • Cheddar cheese

Directions

    In one skillet, take juice of the lemon, mix with the clams and simmer 20 minutes.

    In saucepan, simmer onion, margarine, garlic, oregano, parsley and the 2 peppers until onion is tender. Mix ingredients together and add bread crumbs.

    Top with Cheddar cheese.

    Bake at 350° for 20 minutes, until bubbly.
