Ingredients

  • 1 c. clams
  • 1/4 c. milk or cream
  • 1 clove garlic, minced
  • 2 Tbsp. grated Mozzarella cheese
  • 1 c. oil or butter
  • 1/2 c. sifted flour
  • salt and black pepper to taste
  • 4 eggs
  • 2 Tbsp. chopped parsley
  • 1 tsp. oregano
  • 1/2 c. Parmesan cheese
  • 1/2 c. bread crumbs (Italian)

Directions

    Use canned or fresh clams.

    Chop, but do not make small pieces. Beat eggs and milk for 1 minute.

    Add garlic, oregano, parsley, salt, pepper and cheese to egg mixture and set aside.

    Next put oil in frying pan and heat.

    Mix flour and bread crumbs in bowl.

    Place clams in and coat with crumb mixture.

    Spoon this into the egg mixture and place in oil by spoonfuls (large tablespoon).

    Fry on each side about 1 minute.

    Clam patties should be golden brown on both sides.

    Serve on crusty roll or bread.
