Ingredients
- 1 c. clams
- 1/4 c. milk or cream
- 1 clove garlic, minced
- 2 Tbsp. grated Mozzarella cheese
- 1 c. oil or butter
- 1/2 c. sifted flour
- salt and black pepper to taste
- 4 eggs
- 2 Tbsp. chopped parsley
- 1 tsp. oregano
- 1/2 c. Parmesan cheese
- 1/2 c. bread crumbs (Italian)
Directions

1Use canned or fresh clams.

2Chop, but do not make small pieces. Beat eggs and milk for 1 minute.

3Add garlic, oregano, parsley, salt, pepper and cheese to egg mixture and set aside.

4Next put oil in frying pan and heat.

5Mix flour and bread crumbs in bowl.

6Place clams in and coat with crumb mixture.

7Spoon this into the egg mixture and place in oil by spoonfuls (large tablespoon).

8Fry on each side about 1 minute.

9Clam patties should be golden brown on both sides.

10Serve on crusty roll or bread.
