- 1/3 cup vegetable oil, plus more for the baking dish
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 2/3 cup sugar
- 3 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 large egg
- 1 cup buttermilk
Directions

1Preheat the oven to 400 degrees F and brush a 9-by-13-inch baking dish with vegetable oil.

2Whisk the cornmeal, flour, sugar, baking powder and salt in a large bowl.

3In another bowl, whisk the egg, vegetable oil and buttermilk, then fold into the dry ingredients with a rubber spatula until just combined.

4Transfer the batter to the prepared baking dish and bake until a toothpick inserted into the center comes out clean, 10 to 12 minutes.

5Transfer to a rack and let cool 15 minutes before serving.
