- 1/2 cup breadcrumbs fresh white
- 1 tablespoon olive oil
- 1 tablespoon red wine vinegar
- 1 pound tomatoes ripe, peeled, quartered, seeded
- 8 ounces cucumber peeled, roughly chopped
- 1 clove garlic minced
- red onion finely chopped, to garnish
- green pepper to garnish
Directions

1Combine breadcrumbs, olive oil and vinegar. Set aside to soak for 10 mins.

2In a food processor, puree soaked breadcrumbs, tomatoes, cucumber, garlic and 1 cup cold water until smooth. Season. Chill for 1 hour.

3Half-fill 4 serving glasses or bowls with ice. Pour soup over top. Serve garnished with red onion and green pepper.
