Classic Gazpacho

  • 1/2 cup breadcrumbs fresh white
  • 1 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • 1 pound tomatoes ripe, peeled, quartered, seeded
  • 8 ounces cucumber peeled, roughly chopped
  • 1 clove garlic minced
  • red onion finely chopped, to garnish
  • green pepper to garnish

Directions

    Combine breadcrumbs, olive oil and vinegar. Set aside to soak for 10 mins.

    In a food processor, puree soaked breadcrumbs, tomatoes, cucumber, garlic and 1 cup cold water until smooth. Season. Chill for 1 hour.

    Half-fill 4 serving glasses or bowls with ice. Pour soup over top. Serve garnished with red onion and green pepper.
