Classic Mapo Tofu

Ingredients
- 1 pound regular tofu (medium firmness)
- 1 green onions
- 1/4 tsp paprika powder
- 3 tbsp Chinese hot bean paste
- 3 cloves garlic minced
- 1 tbsp cornstarch
- 2 tbsp water
- 1 tbsp grounded Szechuan pepper
- 1/4 cup vegetable oil
Directions

1Cut the tofu (bean curd) into 1 inch cubes.

2Chop the green onions.

3Use medium high heat to heat up a wok and add vegetable oil. When oil just starts to smoke, add the hot bean paste.

4Mash the bean paste with a spatula, then add the paprika powder.

5Throw tofu cubes in and give them several stir.

6Add szechuan pepper powder and stir several times.

7Turn down the heat to medium, cook for 3 - 4 minutes.

8While cooking, mix cornstarch with water.

9Add minced garlic and cornstarch mixture into the wok. Stir gently until tofu cube are covered by the thickened sauce.

10Serve with chopped green onion garnish.
