- 1 lb lean boneless lamb
- 14 cup lemon juice
- 14 cup olive oil
- 2 -4 garlic cloves, minced
- salt and pepper
Directions

1Trim lamb.

2Cut into 1 inch cubes.

3In a bowl, whisk together lemon juice, oil, garlic, salt and pepper.

4Marinate for up to 24 hours in refrigerator.

6Soak wooden skewers at least 10 minutes to prevent charring during cooking.

7Remove meat from marinade, Thread meat on skewers.
