  • 2 cups cracked wheat
  • 2 cups very hot water
  • 1 cucumber
  • 2 small tomatoes
  • 1 bunch green onion
  • 14-12 cup of fresh mint, chopped
  • 2 cups fresh parsley
  • 1 garlic clove, minced
  • 12 cup fresh lemon juice
  • 12 cup extra virgin olive oil
  • 1 tablespoon pepper
  • salt (optional)

    2 c cracked wheat (bulghur) in 2 c very hot water until water is absorbed, about 30 minutes.

    Drain excess water and squeeze dry.
