  • 2 c. sugar
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 c. oil
  • 3 large eggs
  • 2 tsp. vanilla
  • 2 (6 oz.) jars baby food carrots
  • 1 c. chopped nuts
  • 1 c. sweetened, shredded coconut
  • 1 (20 oz.) can crushed pineapple, drained

    Grease 9 x 13-inch pan and line with waxed paper.

    Grease paper.

    Mix first 7 ingredients.

    Beat until well blended.
