- 1/4 c. butter or margarine
- 1/4 c. flour
- 1 1/2 c. chicken broth (i.e. bouillon and water)
- large can (1 2/3 c.) evaporated milk
- 1/2 to 1 1/2 tsp. salt (as needed)
- 2 1/2 c. cut up cold chicken or turkey
- 3 c. cooked rice
- can mushrooms (optional)
- 1/4 c. diced pimento (optional)
- 1/3 c. chopped green pepper (optional)
- 1/2 c. sliced almonds, toasted
Directions

1Melt butter or margarine; blend in flour and gradually add milk and broth.

2Cook and stir over low heat until thickened.

3Add salt, chicken, rice and vegetables.

4Pour into greased 2-quart 7 1/2 x 11-inch dish.

5Bake at 350° for 30 minutes.

6Sprinkle with toasted almonds.
