Cocoa Pound Cake

  • 2 c. sifted flour
  • 1/2 c. cocoa
  • 1 c. butter or margarine
  • 1 1/4 c. sugar
  • 1 c. eggs (4 or 5)
  • 2 tsp. vanilla

    Mix the flour and cocoa; set aside. Beat the butter and sugar 10 to 12 minutes until fluffy. Add eggs, one at a time, stirring well after each addition. Mix in vanilla with last egg addition. Add the cocoa flour mixture and beat just until smooth. Turn into greased and floured 5 1/4 x 9 1/2 loaf tin. Bake at 300° for 1 hour and 30 minutes. (If using glass, bake at 300° for 10 minutes, then reduce heat to 275° for 1 hour and 20 minutes.) Cool in pan 10 minutes, then remove and finish cooling on wire rack.
