- 2 ripe bananas, mashed
- 1 cup sweetened coconut
- 1 cup crushed pecans
- 12 cup chocolate chips
- 1 ounce light rum
- 3 eggs
- 34 cup vegetable oil
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon salt
Directions

1Preheat oven to 350 degrees.

2Combine banana, coconut, nuts, chocolate, eggs, rum and oil in a bowl until smooth.

3Sift in flour, baking powder and salt.

4Stir just enough to combine.

5Bake in buttered loaf pan or baking dish for 50 minutes or until you can put a tooth pick in and out of it with out extracting batter.

6Remove from oven, flip pan upside down onto a tea towel.

7Remove pan and let bread cool for at least 10 minutes.

8I used a porcelain dish so metal pans will probably have a lower bake time.
