Coconut and cherry biscuits

  • 125 grams butter
  • 150 grams icing sugar
  • 1 large egg
  • 175 grams flour
  • 50 grams unsweetened desiccated coconut
  • 1 tbsp baking powder
  • 75 grams chopped cherries
  • 1 quarterd cherries for decorating

    Preheat oven 180C, line baking tray.

    Beat butter until soft.

    Add icing sugar and mix, add egg.

    Little by little add flour, coconut, baking powder and pinch of salt.

    Mix until smooth paste then add chopped cherries.

    Place small spoonful of dough on baking tray, spacing them out.

    Put quarter cherry on top.

    Cook for 12 minutes.

    Cool on tray for 5 minutes then place on wire reck
