Ingredients
- 3 c. all-purpose flour
- 1 Tbsp. baking powder
- 1 tsp. salt
- 1 c. sugar
- 2 c. finely grated fresh coconut
- 1 egg, well beaten
- 1 tsp. vanilla
- 1 c. evaporated milk
- 4 oz. unsalted butter, melted and cooled
- sugar (for sprinkling)
Directions

1Sift the flour, baking powder and salt together.

2Mix in the sugar and coconut.

3Add the egg, milk, vanilla and butter.

4Mix lightly but thoroughly.

5Divide the mixture between 2 greased 9 x 5-inch loaf pans.

6Fill each about 2/3 full.

7Sprinkle with sugar and bake in a 350° oven for about 55 minutes or until a cake tester comes out clean.

8Let loaves cool partially in pans.

9Then turn out on cake rack.
