- 3 c. flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 2 c. sugar
- 1 c. vegetable oil
- 4 eggs, slightly beaten
- 2 tsp. coconut extract
- 1 c. buttermilk
- 1 c. shredded coconut
- 1 c. chopped walnuts
Directions

1Combine flour, baking powder and salt; set aside.

2In large bowl combine sugar, oil, eggs and extract.

3Add dry ingredients alternately with buttermilk; stir just until moistened.

4Fold in coconut and walnuts.

5Pour into 2 greased and floured 8 1/2 by 4 1/2 inch loaf pans.

6Bake at 325° for 1 hour or until bread tests done.

7Cool 10 minutes in pans before removing to a wire rack to cool completely.
