Ingredients

  • 2 eggs
  • 4 egg yolks
  • 1 loaf french bread, cubed
  • 1/4 tsp nutmeg
  • pinch mace
  • 1/4 tsp salt
  • 2 can unsweetened coconut milk
  • 13 1/2 oz cream of coconut
  • 1 cup sweetened coconut flakes

Directions

    mix all ingredients, except eggs and egg folks in a large bowl until well blended.

    Add eggs and egg yolks, mix well.

    Spray a baking dish with non stick cooking spray.

    Pour mixture into baking dish, cover with plastic wrap and refrigerate for 1hour.

    After 1hour, place bread pudding dish in a water bath, sprinkle with toasted coconut flakes, completely cover with foil and bake at 325F for 1hour.

    Remove from oven and serve.
