She-Crab Soup

Ingredients
- 1/4 lb. butter
- 2 Tbsp. flour
- 1 tsp. salt
- 1/4 tsp. red pepper
- 1 tsp. chopped parsley
- 1/3 c. chopped scallions
- 1/4 tsp. nutmeg
- 2 c. milk
- 4 c. crab meat
- 1 1/2 pt. heavy cream
- 3 to 4 oz. dry sherry (optional)
Directions

1Melt butter; then add flour, salt, red pepper, parsley and nutmeg.

2Cook for 1 minute and then add milk.

3Stir and cook until thick.

4Add crab meat. May be held at this point.

5When ready to serve, stir in heated cream and sherry.

6Serves 4.
