- 2 c. flour
- 1 1/2 c. sugar
- 1/3 c. plus 3 Tbsp. shortening
- 1 c. milk
- 2 eggs
- 3 tsp. baking powder
- 3/4 tsp. salt
- 1 tsp. vanilla
Directions

1Sift flour, sugar, baking powder and salt together.

2Add shortening, milk, vanilla and beat for 2 minutes on medium speed. Add egg and beat another 2 minutes.

3Pour into 3 (8-inch) greased and floured cake pans.

4Cook in 350° oven until lightly brown, about 30 minutes.

5Spread layers and sides and top of warm cake with cooked frosting.

6Cover with coconut.
