  • 1 c. shortening
  • 1 c. milk
  • 2 c. sugar
  • 3 c. self-rising flour
  • 4 eggs
  • 1 tsp. lemon extract
  • 1 (8 oz.) carton sour cream
  • 2 (8 oz.) frozen coconut
  • 2 c. granulated sugar

Directions

    Mix shortening, milk, sugar, flour, eggs and lemon extract together and bake at 350° until done.

    Makes 4 large layers.

    Mix sour cream, coconut and granulated sugar together and spread over cake layers while cake is still warm.

    It will seep in and make it moist.
