- 2 c. sugar
- 1 c. butter or margarine
- 5 eggs (I use egg substitute)
- 1 c. coconut, soaked in 1 c. milk
- 2 1/2 c. flour
- 1 tsp. baking powder
Directions

1Cream butter and sugar; add eggs and mix well.

2Sift together flour and baking powder.

3Add to other mixture alternating with coconut and milk.

4Pour into greased and floured pan (or use Pam). Bake in a 325° oven.

5For tube pan bake 70 minutes; for 13 x 9-inch pan bake 55 to 60 minutes.
