  • 1 3/4 c. sifted cake flour or 1 1/2 c. all-purpose flour
  • 2 tsp. double-acting baking powder
  • 1/4 tsp. salt
  • 1/2 c. butter or margarine
  • 1 c. sugar
  • 2 eggs
  • 2/3 c. milk
  • 1 tsp. vanilla
  • 2/3 c. flaked coconut

Directions

    Combine flour, baking powder and salt.

    Cream butter; gradually add sugar, beating until light and fluffy.

    Add eggs, one at a time, beating well after each.

    Add flour alternately with milk, beating until smooth.

    Stir in vanilla and coconut. Pour into 2 greased and floured 8-inch pans.

    Bake at 350° for 30 to 35 minutes or until tester comes out clean.
