  • 1 c. coconut, toasted
  • 1/2 c. pecans, chopped
  • 2 Tbsp. margarine
  • 3 (8 oz.) pkg. cream cheese
  • 1/2 c. sugar
  • 1/2 tsp. vanilla
  • 1/2 tsp. almond extract
  • 3 eggs
  • 1 egg white
  • 1/2 tsp. vanilla
  • 1/3 c. sugar
  • 2/3 c. toasted coconut

Directions

    Mix 1 cup coconut, pecans and margarine (melted).

    Press into 9-inch pan.

    Set aside.

    Cream the cream cheese and 1/2 cup sugar. Add vanilla and almond extract.

    Beat until fluffy.

    Add 3 eggs. Combine.

    Pour into crust and bake at 350° for 35 minutes.

    Beat 1 egg white; add vanilla and 1/3 cup sugar.

    Fold in remaining coconut and put on top of cake.

    Bake 20 minutes longer.
